Preheat oven to 220°C / 200°C fan / gas mark 7. Remove the Sage leaves from the stems and chop the leaves. Chop the Red Onion, chop the Potatoes into chunks, chop the Carrot into chunks and chop the Apple into wedges.

Add the Potatoes to a baking tray, coat with a drizzle of oil and season with salt and pepper. Spread out and avoid overlapping where possible. Use a larger baking tray or a second if needed. Place on the top shelf of the oven and roast for around 30 to 35 minutes or until golden brown.

On another tray add the Carrot, Red Onion and Apple. Drizzle with a little oil and season with salt and pepper. Sprinkle the Sage over the top. Place the Meat Free Sausage on top of the veg. Cook for 25 to 30 minutes until the veg is soft and the Meat Free Sausage are golden.

Halfway through the cooking, turn the Potatoes over and mix up the Meat Free Sausage and veg on the tray. Return to the oven to cook further.

A few minutes before your Meat Free Sausage and veg are finished grab a small pan and add the Water, Butter, Onion Marmalade and Vegetable Stock. Bring to the boil and mix together. Season with a little salt and pepper.

Equally share the Meat Free Sausage, veg and Potatoes across your plates and then add some of the sauce over the top. Eat and enjoy!
